If you grow zucchini or have ever grown zucchini you know how prolific a producer the plant is.
A couple of years ago I ran across a great way to use zucchini. Even those big ones that grow to a large size seemingly overnight.
The recipe comes from a very popular blog called “Chocolate Covered Katie”. Her recipe is an egg-free, gluten-free, vegan recipe. I adapted it so that it isn’t gluten free. If you would like to see the original recipe here is the link.
It is a great way to use up excess zucchini and is very low in calories (unless you use copious amounts of dip like one son of mine)

It is nice to have a different way to eat zucchini. I grilled some last night with garlic, parmesan butter.

Baked. Far better than when we were gardeners, farmers. We fried them. Oh, so good, but lots of oil.
The copious amounts of Ranch dressing the Nicholas uses probably negates any of the healthiness of it.
