One of our favorite meals is my version of Cook’s Illustrated’s Homemade Chicken Pot Pie.
Homemade chicken pot pie is so much better than the frozen kind. Making it yourself, you really have the option to put in whatever veggies you want.
I use homemade pie dough that I make ahead of time and store in the freezer. Here is my favorite recipe to Homemade Pie Dough. Doing that cuts down on the time it takes to make this meal. You could easily use store bought pie dough as well.
I changed the original recipe to suit our tastes. I added mushrooms because we all love mushrooms and I substituted leeks for the onions. I like the subtle flavor of leeks. I also removed the peas. I only eat peas if they are raw or cooked minimally.
Chicken pot pie is comfort food at its best. Served with a salad or vegetable on the side it makes for a filling meal. You could also do what we do and just eat the pot pie. After all, it does have veggies in it.

Homemade Chicken Pot Pie
Ingredients
- Pie Dough
- 1 1/2 lbs boneless skinless chicken breasts or thighs
- 2 cups chicken broth
- 1 1/2 tablespoons vegetable oil
- 2 Leeks ends trimmed, dark green parts cut off, slice down middle to clean, cut into 1/4 inch pieces
- 3 medium carrots peeled cut into 1/4 inch coins
- 2 ribs celery cut into 1/4 inch pieces
- 8 ounces sliced mushrooms
- 4 tabelspoons butter
- 1/2 cup unbleached all-purpose flour
- 1 1/2 cups milk
- 1/2 teaspoons dried thyme
- 3 tabelspoons dry sherry
Instructions
- Adjust oven rack to second place from the bottom. Preheat oven to 400 degrees.
- In a dutch oven or sautΓ© pan, place chicken and broth, bring to a simmer over medium heat and cook 8 - 10 minutes. Transfer meat to a large bowl. Reserve chicken broth in measuring cup.
- While chicken is poaching prepare vegetables.
- In the now empty pan, heat oil over medium high heat. Add leeks, celery, carrots and mushrooms. Saute until tender-crisp and mushrooms are browned. Season with salt and pepper.
- While vegetables are sautΓ©ing , shred chicken, with two forks , into bite size pieces. Transfer vegetables to the bowl with the shredded chicken.
- In the now empty pan, melt butter over medium-high heat . Add flour, cook for 1 minute. Whisk in reserved chicken broth (top off with water to make two cups), milk and thyme. Bring to a simmer, whisking constantly, until sauce thickens. Season to taste with salt and pepper. Off heat stir in sherry.
- Pour sauce over chicken and vegetable mix in bowl. Stir to combine.
- Roll out pie dough. Pour chicken pie filling into shallow baking dish (9 x 13 or any other 3 quart baking dish). Top with pie dough. Cut 4 to 6 vents in crust.
- Bake 30 minutes or until filling is bubbling and pie crust is browned.
Notes
To make this dish quicker to prepare use store bought pie dough our make pie dough ahead of time and store in the freezer.

It is easy to make especially if you use store bought pie dough. My pie dough is better though. At some point I’ll post the recipe.

What makes you feel really old is when you are 47 and you make a serious life change…..like becoming a farmer…..the adjustment has been brutal….I keep asking myself…”is this so hard because it is so different or is it because I’m 47 years old?” Probably both.

as I was saying…one of my favorite dishes but since the family is not really into veggies, I have never made it. I suppose I could make my own version, omitting all the veggies??? Or, do that with a side salad which they will complain about because they are “sick of salad”??? Or make it the way I like it with lots of veggies which means they will spend most of the meal time picking out all of those wonderful vegetables which just seems wrong and only makes me want to scream out, “you know there are starving people in this world?” Oh well, how about this Karen. The next time you are planning this for dinner, call me and I will drive the 75 minutes!!! The family can have grilled cheese and soup (from a can of course).

It is also good left over. Make yourself a half size one and make them cold cheese sandwiches (not grilled) and as you are eating it make lots of “Mmmmmm” and “Oh,this is good”, etc. comments. Then ask, “How is your sandwich?”
Or, how about this. Let’s skip the “order take out” for mother’s day and I (with help from Emily) will make us chicken pot pie. Emily helping me may get her to try it.

Don’t leave me out Karen!!! HA. But it would be a long trip to get there, that’s for sure. I actually had a lovely homemade chicken potpie this very afternoon. It was served in individual bowls, had no crust on the bottom, but had golden brown Pepperidge Farm puff pastry on top. It was wonderful, and I can tell from your beautiful picture that yours is too. Today we were celebrating a dear friend’s 81st birthday. Her name is Barbara and she is a real card….we had a lovely time. Chicken Pot Pie is always a treat.

I’ve had pot pies served with mashed potatoes. Thought that was an unusual combo at first but became a believer π And I think is better than the double crust.
That sounds nice and comforting. Do you put the mashed potatoes on the bottom and then put the filling and top crust?

Sorry it was clear in my head but not in the email. Good example why communication is so hard. The mashed potatoes are prepared separate. Then serve either along side the scooped out portion of pot pie or underneath. Like stew that doesn’t have the potatoes in the mix but is served with mashed potatoes along side or with the stew ladled over the top. I like that combo and presentation too. I’m never happy if a bottom crust is soft or soggy, so top crust only and with the mashed potatoes, yum.
Chicken (turkey, chevon, whatever) pie is one of my favorite meals. I make it in a regular pie shell with bottom and top crusts, also a country pie with biscuits on top, but hadn’t thought to simply top with a pie crust top. Great idea. I need to make a bunch of pie shells for the freezer anyway. π
I’m not a fan of pot pie unless I make it. I just like to put in it what I like. I have never made a beef pot pie before but I should try. It would probably be just like stew except with a crust on it. That doesn’t sound bad π
