Chicken Bacon Sliders. A great dinner or lunch.
I cannot take credit for this recipe, but I will say it is one of our favorites.
When I found this recipe on the Pioneer Woman’s blog it was instantly a hit.
I use whole wheat dinner rolls and let’s face it, I eat two. They are just so good. Actually, when I make them, I make extra. Really easy lunch the next day.
These sandwiches are very tasty and easy to make. That is a win win.

Chicken Bacon Sliders
Excellent sandwich from The Pioneer Woman. This recipe is easy to scale up or down to feed however many people you are feeding.
Ingredients
- 3 boneless/skinless chicken breasts or 12 chicken tenders
- 12 pieces of bacon
- Cajun seasoning
- 12 slices of cheese of your choice
- Bottle of barbecue sauce we use Sweet Baby Rays
- 12 dinner rolls
- Lettuce
- Tomatoes sliced
- Mayonnaise
Instructions
- Preheat large skillet over medium-high heat
- Preheat oven to 250°
- Cook bacon to desired doneness in skillet. Reserve the bacon grease in the skillet.
- While bacon is cooking, with a sharp knife, cut chicken breasts in half horizontally. One breast now became two pieces. Next cut them vertically. Now each breast is in four pieces. You will have a total of twelve pieces of chicken
- If using chicken tenders, you can cook them as they are or pound them a little to make them thinner.
- Cook the pieces of chicken in batches in the hot skillet containing bacon fat. Sprinkle each piece of chicken with the Cajun seasoning. Cook until brown then flip to the other side and sprinkle with a little more Cajun seasoning.
- When cooked through, transfer to a cookie sheet. Place one piece of bacon on each piece of chicken and cover with a piece of cheese. Place in oven, add other chicken pieces as they are cooked. Don't forget to add the bacon and cheese. Keep in oven until cheese is melted.
- While chicken is in the oven prepare the rolls. Cut each in half. On the top half put mayonnaise. On the bottom half put barbecue sauce. On top of the barbecue sauce put a chicken/bacon/cheese piece.Top with lettuce and a slice of tomato. Add some salt and pepper to the tomato.
